Gearing up for Veg Week that usually coincides with Earth Day, April 22, 2016 , I thought I should add some more awesome recipes to inspire!
I usually look to what I already have in the fridge/cupboards when I'm planning my meals. Really wanting a good avocado type burger I had the perfect avocado ready to go, but I still needed some kind of burger.... and bun.
The patty came together so nicely that I had to share this delicious, easy recipe with you.
Vegan Patty; (Gluten Free)
1 cup shredded carrots
1 cup sunflower seeds
1 cup rolled oats
1 cup rolled oats ground to flour
1/4 onion diced
3 cloves garlic
5 tbsp flax seeds
sea salt and pepper
Add 1 1/2 cups of filtered water, mix well (the consistency will be quite sloppy and wet at this point) set in the fridge for 1 hr.
Press mixture into balls in your hands then press into 3/4 of an inch tall patties on the baking sheet.
Bake for 45 mins at 350.
Top with your favorite burger toppings and enjoy!
Some of my favorite toppings are hummus and avocado, sprouts, and mustard! Yumm.
I made a quick and easy Spelt olive loaf ( not so GF) as the bun and have leftovers for avocado toast tomorrow morning.
