1/2 shredded Green Cabbage
2 shredded organic Beets
2 shredded organic Carrots
1 large bunch organic Parsley
Dressing
1 Avocado
1/4 Red Onion
2 tbsp Balsamic vinegar
4 tbsp filtered water ( you can use 1tbsp of a healthy oil instead of water)
1 lemon juiced
Sea salt and Pepper to taste
Zip in a blender for 1 min, toss with salad, topp with your favorite nuts and seeds, enjoy.
This salad stays crispy and fresh in the refrigerator throughout the week, one I love to make in advance to have on hand.
